I don't think there is universal rule. I think it's all about execution:
You elude to it yourself, "simple" games are fun because they're easy to pick up (Uno in person or XBLA), good to pass the time (Tetris/Solitaire) or good activities for groups (Twister). I think the latter is the reason why the Wii is dominating this generation: great for parties/families.
The more involved games will always be fun because core games are the foundation of the industry and will always be catered to. Rainbow Six (probably my favorite console franchise right now) is so much fun because it's executed beautifully. I can't get into other FPS/Army games because it's not as slick as Rainbow. It's the beautiful combination of depth and simple objectives.
I've had two so far and neither one had the red ring of death. Guess I'm lucky too.

I like my Xbox 360...there may not be many games appropriate for a 7 year-old, but there's always the Live Arcade games (Uno, etc.)
You could always buy a portable system (if you're not committed to getting him a console). I think a Nintendo DS would be great for him and meet many of your requirements.

Omarosa! OMG, I haven't watched The Apprentice since season two, but when they announced the celebrity edition and that she was on it, I made sure to clear my schedule on Thursdays.
Whether you love her or hate her, her personality makes for great television, and keeps you coming back for more. Dare I say, they couldn't have done a celebrity version of the show without her? She made the show the phenomenon it was several years ago.
The format (content) is still the same, but the personalities this season make it watchable again.

I've tried to get into the 3by9 podcasts, but it's not the same. I don't care for this "Scoble" you always speak of. You guys are at your best when talking about nonsensical topics like sex, pop culture and the types of women in Florida cities. Then it's accessable and we can all join in the debauchery.
I've been with HSBC for like six years and I love them. Thing is they're only in a few cities (in the US). When I moved here to the Bay Area I had to get a BOA account and I'm getting beat like a redheaded stepchild.
