Aside from my recent discovery of On The Job (which does an awesome job btw), I have yet to find any other alternatives with offer the ability to track projects, calculate expenses, and generate PDF invoices for pushing to clients. Is there anything else worth checking out?

For some reason or another I recall something that did exactly that (maybe with the exception of PDF invoices), but for the life of me I can't remember. I'm sure someone around here will help to refresh my memory.

I've been using On The Job for a few months now and it's fantastic. It may not have as many features as some of the competition, but who cares. It does a few things really really well.
I used a few of the web-based apps, but of course they require connectivity and they don't have the convenient timer interface.

I'm curious to know if there are other options as well. Switching to a Mac I have to be careful there are alternatives. Once things calm down a bit I'll do some checking. I'm very picky about invoice programs. :)

Tyme & Scrivs, Studiometry looks like a more advanced solution for tracking projects on OS X. No Universal Binary release yet which is - honestly - the only reason why I didn't consider using it. I'm finicky like that.
